After the great response I had on my first Cooking Otaku blog. I thought that another follow-up was in order before the weekend. As it stands, I will be doing this blog every Friday from here on out. So that you all will have the weekend to try out the new dish.

Today's special is something a little more on the sweet side. Daifuku. Which is a very simple rice cake that you can stuff with whatever you desire. For this version, we will be filling it with my favorite filling. Red Bean Paste!

So let's get started making Daifuku (with Red Bean Paste)!

Let's gather our ingredients:

1 cup Rice Flour
1/4 cup Sugar
2/3 cup Water
Potato Starch (for dusting)

Filling:
Red Bean Paste



Mix the Rice Flour, Sugar and Water into a small microwave safe bowl. If need be, add little more water till the mixture is combined and a little shiny. (left) Place bowl in the microwave and cook for 2 minutes. Mix contents and place back in the microwave for another minute. This time in the microwave the mixture should start expanding. It should look more smooth. (right)



CAUTION! MIXTURE IS EXTREMELY HOT!
Carefully take it out of the bowl and place on a Potato Starch covered surface. Cover your hands with some of the starch to keep them from sticking to the mixture. Mold it into a snake shape.



Pinch off 10-12 balls. Depending on how big you want your daifuku.



Using your thumb and first two fingers. Pinch from the middle out and stretch till you have a flat disc. Treat it just like a dough. Don't go too thin or the filling will pop out later. 



Place your filling on each disc. This is where you can be creative with this dish. You can fill it with whatever you like. Be it red bean paste, fresh fruit, jams, jelly, nuts and so on.



Now here comes a tricky part. Closing the daifuku. Try to gather all the sides together in the middle. Using a pinch and twist technique. Close them as good as you can without any of the filling coming out the other side. 



After you have all your daifuku made. Boil some water and make your favorite cup of tea.



There you go! Now you have a great sweet snack that you can enjoy anytime of the day!

Also as a bonus thing that you can do is to flavor the daifuku itself. Just add a couple of drops of your favorite fruit extract or even some food coloring to make them pretty. Have fun with these over the weekend and let me know how both dishes come out!
